1 cup fresh peaches, diced

Instructions:
Preheat oven to 350°F (175°C).
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
Mix in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, stirring just until incorporated—avoid overmixing.
Gently fold in the diced peaches.
Drop rounded tablespoonfuls of dough onto a lined or greased baking sheet.
In a small bowl, combine ground cinnamon and sugar, then sprinkle over the tops of the cookies (similar to snickerdoodles).
Bake for 12–15 minutes, until the edges are lightly golden.
Allow cookies to cool on the sheet for about 5 minutes before transferring. Store in an airtight container.
