Thai Chicken Bites

Ingredients
1 large boneless, skinless chicken breast

½ cup all-purpose flour

½ teaspoon garlic powder

Salt and black pepper, to taste

1 egg, beaten

Oil, for frying

Sweet Thai chili sauce (store-bought)

1 carrot, julienned

Fresh cilantro, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or cauliflower rice, for serving

Instructions
Cut the chicken breast into bite-sized pieces.

In a shallow dish, combine the flour, garlic powder, salt, and pepper.

Dredge the chicken pieces in the flour mixture.

Dip them into the beaten egg, then coat once more in the flour mixture.

Heat oil in a deep skillet over medium heat.

Fry the chicken until golden, crispy, and cooked through. Transfer to a paper towel–lined plate to drain.

Place the fried chicken bites in a large bowl and toss with sweet Thai chili sauce to your liking.

Garnish with julienned carrots, chopped cilantro, and sesame seeds.

Serve with rice or cauliflower rice on the side.
