Ingredients
1 cup cooked rice (white, brown, or cauliflower rice for a lighter option)
1 lb boneless, skinless chicken breast
Salt and pepper, to taste
Olive oil (for cooking)
Mixed vegetables (broccoli, carrots, bell peppers, squash, or your favorites)
For the Bang Bang Sauce:
½ cup Duke’s mayonnaise
2 tablespoons sriracha
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon lime juice
Instructions
Cook the Rice:
Prepare 1 cup of your preferred rice according to package directions.
Prep the Chicken:
Cut the chicken breasts into evenly sized, bite-sized pieces.
Season generously with salt and pepper.
Cook the Chicken:
Heat a drizzle of olive oil in a large skillet over medium heat.
Add the chicken and sauté until golden brown and fully cooked through.
Transfer to a plate and set aside.
Make the Bang Bang Sauce:
In a small bowl, whisk together the mayonnaise, sriracha, honey, garlic powder, and lime juice until smooth.
Cook the Vegetables:
In the same skillet, add a little more olive oil if needed.
Sauté your vegetables until just tender but still vibrant.
Assemble the Bowls:
Start with a base of rice.
Add the sautéed vegetables and chicken on top.
Drizzle generously with bang bang sauce, or serve the sauce on the side for dipping.
