Ingredients:
2 lbs ground beef
1½ cups Fritos or crushed corn tortillas (as a breadcrumb alternative)
1 small yellow onion, finely diced
1 green bell pepper, finely diced
2 large eggs
1 can Rotel tomatoes
1 cup corn (canned or frozen)
1 packet taco seasoning
1 cup shredded cheese (plus extra for topping)
Taco sauce (for topping)
Instructions:
Preheat the Oven: Set your oven to 350°F (175°C).
Combine Ingredients: In a large bowl, mix together the ground beef, crushed Fritos or corn tortillas, onion, bell pepper, eggs, Rotel, corn, taco seasoning, and 1 cup of shredded cheese until fully blended.
Form the Loaf: Press the mixture into a 9x5-inch loaf pan, or shape it into a loaf by hand and place it on a baking sheet.
Bake: Bake the meatloaf for 50 minutes.
Add Toppings: Remove from the oven, then spread taco sauce over the top and sprinkle with additional shredded cheese.
Finish Baking: Return to the oven and bake for another 15 minutes, until the cheese is melted and bubbly.
Rest and Serve: Let the meatloaf rest for a few minutes before slicing. Enjoy as is, or serve it in flour tortillas or over rice for a creative twist.
