Ingredients

For the Meatballs:

1 lb ground beef (or use ground chicken, pork, or your preferred meat)
1 cup panko breadcrumbs
1 large egg
1 small onion, finely grated (a microplane works great and adds moisture)
1/4 cup Guinness beer
Salt and pepper, to taste
Optional seasonings: garlic powder, onion powder, herbs, etc.

For the Guinness Sauce:

1 cup Guinness beer
1/2 cup ketchup
2 tablespoons honey
1 tablespoon molasses
1 tablespoon Dijon mustard
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon cornstarch (optional, for extra thickening)

Instructions

1. Preheat the Oven
Set your oven to 350°F (175°C) and allow it to preheat.

2. Make the Meatballs
In a large bowl, mix together the ground meat, breadcrumbs, egg, grated onion, Guinness, salt, pepper, and any optional seasonings.
Blend everything until fully combined.
Form into 1.5-inch meatballs and arrange them on a baking sheet.

3. Bake
Place the meatballs in the oven and bake for 20–25 minutes, or until cooked through.

4. Prepare the Guinness Sauce
While the meatballs are baking, combine the Guinness, ketchup, honey, molasses, Dijon mustard, onion powder, and garlic powder in a small saucepan.
Bring to a boil, then reduce to a simmer. Let it cook down slightly while the meatballs finish.
Stir in the cornstarch if you'd like a thicker sauce.

5. Serve
Once the meatballs are ready, remove them from the oven and toss or coat them in the warm Guinness sauce.
Serve with mashed potatoes and green beans, or enjoy as a flavorful appetizer
