Ingredients
For the Pork & Marinade:
1–1.5 lbs lean boneless pork chops or pork tenderloin, cut into cubes
2 tbsp freshly grated ginger (or ginger paste)
3 cloves garlic, minced
Zest and juice of 2 limes
3 tbsp soy sauce
2 tbsp honey
For the Coconut Rice:
1½ cups jasmine rice
1 (14 oz) can coconut milk
1 cup water
Pinch of salt
For Serving & Garnish:
Chopped cilantro
Sliced green scallions
Chopped peanuts (optional)
Instructions
Marinate the Pork:
In a bowl, mix together the ginger, garlic, lime zest and juice, soy sauce, and honey.
Add the cubed pork and toss until well coated. Marinate for at least 20 minutes, or up to overnight for deeper flavor.
Prepare the Coconut Rice:
Rinse the jasmine rice until the water runs clear.
Add the rice, coconut milk, water, and salt to a pot and bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes.
Remove from heat and let sit, covered, for 10 minutes. Be careful not to overcook.
Cook the Pork:
Heat a skillet over medium-high heat.
Sear the marinated pork for 4–5 minutes per side, until browned and cooked to an internal temperature of 145°F.
Remove from heat and let rest briefly.
Serve:
Fluff the coconut rice and spoon onto plates.
Top with the cooked pork.
Finish with cilantro, scallions, and peanuts if using.
