Ingredients
For the Meatballs:
1½ pounds ground pork
⅔ cup panko breadcrumbs
1 tablespoon finely chopped fresh sage
1 garlic clove, grated
1½ teaspoons kosher salt
Black pepper, to taste
¼ teaspoon ground allspice
1 large egg, lightly beaten
½ Granny Smith apple (about ½ cup), grated
For the Sage Sweet Potato Mash:
2½ pounds sweet potatoes, peeled and cut into large chunks
½ cup heavy cream
3 tablespoons salted butter
Salt and pepper, to taste
Fresh sage leaves, finely chopped
Instructions
Make the Meatballs:
In a large bowl, gently combine the ground pork, panko, chopped sage, grated garlic, salt, pepper, allspice, and beaten egg until just mixed. Avoid overworking the mixture.
Grate half of a Granny Smith apple and gently fold it into the meat mixture.
Shape the mixture into evenly sized meatballs.
Heat a skillet over medium heat and brown the meatballs, turning occasionally, until cooked through. Remove from heat and set aside.
Prepare the Sage Sweet Potato Mash:
Add the sweet potatoes to a large pot and cover with water. Bring to a boil and cook until fork-tender.
Drain the potatoes and return them to the pot.
Add the heavy cream, butter, salt, pepper, and chopped sage.
Mash until smooth, creamy, and well combined.
To Serve:
Spoon the sage sweet potato mash onto plates and top with the pork, apple, and sage meatballs.
