Ingredients
Meatloaf Layer:
Ground beef
Chopped onion
Breadcrumbs
1 egg
Milk
Salt and pepper
Macaroni and Cheese Layer:
2 tablespoons butter
2 cups milk
Salt, pepper, paprika, and dry mustard (½ teaspoon each)
2 tablespoons flour
2 cups shredded cheddar cheese (plus extra for topping)
Elbow macaroni (enough to fill a 9×13" casserole)
Instructions
Preheat oven to 350°F (175°C).
In a mixing bowl, combine the ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix just as you would when preparing classic meatloaf.
Press the meat mixture firmly and evenly into the bottom of a greased 9×13-inch baking dish.
Bake the meatloaf layer for about 20 minutes.
While it bakes, cook the elbow macaroni according to package directions until just al dente. Drain and set aside.
In a saucepan, melt the butter and stir in the flour to form a roux. Gradually whisk in the 2 cups of milk, then season with salt, pepper, paprika, and dry mustard. Cook until the sauce warms and thickens slightly.
Add the 2 cups of shredded cheddar cheese and stir until completely melted. Combine the cheese sauce with the cooked macaroni.
Spread the macaroni and cheese over the partially baked meatloaf layer, then sprinkle with a little extra cheddar on top.
Return the dish to the oven and bake for an additional 25 minutes, or until the top is golden, bubbly, and heated through.
Allow it to cool for a few minutes, then cut into squares and serve. Pair with a simple salad for a complete meal!
