Ingredients
Dry Ingredients:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon ground allspice
Wet Ingredients:
½ cup (1 stick) melted butter
½ cup granulated sugar
¼ cup brown sugar
2 large eggs
½ cup apple cider
1 teaspoon vanilla extract
Topping:
¼ cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons melted butter
Instructions
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, and allspice.
Mix Wet Ingredients
In a separate bowl, whisk together the melted butter, granulated sugar, brown sugar, and eggs. Stir in the apple cider and vanilla extract until smooth.
Combine Mixtures
Add the wet ingredients to the dry ingredients and gently fold until just combined—avoid overmixing.
Bake
Pour the batter into the prepared loaf pan and bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
Prepare the Topping
While the loaf cools slightly, mix the granulated sugar and cinnamon together in a small bowl.
Finish the Loaf
Brush the warm loaf with the melted butter, then sprinkle the cinnamon-sugar mixture generously over the top.
Serve
Slice and serve warm—or enjoy toasted the next morning with a cup of coffee!
