1½ cups powdered sugar
½ cup lemon-flavored instant pudding mix
Instructions:
Place the Rice Chex cereal in a large mixing bowl.
In a microwave-safe bowl, combine the white chocolate chips, butter, lemon zest, and lemon juice. Microwave in 20-second intervals, stirring after each interval, until smooth and fully melted.
Pour the melted mixture over the Rice Chex cereal and gently stir to coat the cereal evenly.
In a large resealable plastic bag, combine the powdered sugar and lemon-flavored instant pudding mix.
Add the coated cereal to the bag, seal, and shake until the cereal is evenly covered.
Spread the coated cereal on parchment paper and let it cool.
