Zucchini Casserole

Ingredients:
1 cup baking mix (Formula L by Southern Biscuit Company recommended)

½ cup shredded Parmesan cheese

1 tablespoon dried dill

1 teaspoon salt

⅛ teaspoon black pepper

4 large eggs, slightly beaten

½ cup canola oil

3 cups diced zucchini

1 large onion, chopped

Instructions:
1. Preheat the Oven:
Set your oven to 375°F (190°C) to warm up while you prepare the casserole.

2. Combine Dry Ingredients:
In a large bowl, mix the baking mix, Parmesan, dill, salt, and black pepper. Stir well to ensure everything is evenly combined.

3. Add Wet Ingredients:
Create a small well in the center of the dry mixture. Pour in the beaten eggs and canola oil. Mix until a thick, smooth batter forms.

4. Fold in the Vegetables:
Add the diced zucchini and chopped onion. Stir gently until the veggies are evenly coated in the batter.

5. Prepare Your Dish:
Lightly grease a 1.5-quart baking dish to prevent sticking.

6. Assemble and Bake:
Pour the zucchini mixture into the prepared dish and spread it evenly.
Bake for about 30 minutes, or until the top turns golden brown and a toothpick comes out clean.

7. Serve and Enjoy:
Let the casserole cool slightly before serving. It makes a flavorful side dish and tastes even better the next day!
