Potstickers Salad (Dumpling Salad)

Ingredients:
Frozen Potstickers/Dumplings – 1 pound (chicken is a great choice)

Heirloom Tomatoes – 1 pound, assorted colors, chopped

English Cucumber – 1, thinly sliced

Scallions – 5, thinly sliced

Red Chili Pepper – 1 (or substitute with a milder pepper)

Fresh Basil Leaves – ½ cup

Carrots – Thinly sliced or julienned (optional)

Cabbage – Thinly sliced (optional)

Edamame – Shelled (optional)

Toasted Sesame Seeds – For garnish

Garlic Chili Sauce – For a spicy kick (optional)

Dressing:
Tamari (Low Sodium Soy Sauce) – 3 tablespoons

Balsamic Vinegar – 2 tablespoons

Maple Syrup – 2 to 3 teaspoons, to taste

Instructions:
Cook the Dumplings:
Steam the frozen dumplings according to the package instructions. Let them cool completely before assembling the salad.

Make the Dressing:
In a small bowl, whisk together tamari, balsamic vinegar, and maple syrup until smooth and blended.

Assemble the Salad:
In a large mixing bowl, combine the cooled dumplings, heirloom tomatoes, cucumber, scallions, chili pepper, and basil. Add optional ingredients like carrots, cabbage, or edamame if using.

Add the Dressing:
Pour the prepared dressing over the salad and gently toss until everything is well coated.

Garnish and Serve:
Sprinkle with toasted sesame seeds and drizzle with garlic chili sauce if desired.
