Ingredients
1 cup sugar
1 cup light brown sugar
1 cup vegetable oil or melted butter
4 large eggs
1½ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon vanilla extract
Pecans (enough to generously cover the top), lightly tossed with flour
Instructions
Preheat your oven to 350°F (175°C).
Grease a 9x13-inch baking dish with butter or nonstick spray.
In a large mixing bowl, combine the sugar, brown sugar, and vegetable oil (or melted butter, if using).
Beat in the eggs until the mixture is smooth and fully blended.
Stir in the flour, baking soda, salt, and vanilla, mixing just until everything is incorporated.
Pour the batter into the prepared baking dish and spread evenly.
Toss the pecans with a small amount of flour to help keep them from sinking, then sprinkle them over the top of the batter.
Bake for about 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Let cool before slicing into squares and serving.
