3/4 cup unsalted butter
1 cup granulated sugar (plus more for rolling)
1 large egg
1/4 cup molasses
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large mixing bowl, cream the butter and 1 cup of sugar together until light and fluffy.
Beat in the egg, molasses, and vanilla until smooth and fully incorporated.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves.
Slowly add the dry ingredients to the wet mixture, mixing just until a soft dough comes together.
Scoop the dough into small balls, roll each one in granulated sugar, and place them on the prepared baking sheet.
Bake for 8–11 minutes, until the edges are set and the tops are nicely crackled. The centers should remain slightly soft for a chewy texture—bake a bit longer if you prefer them crisp.
Allow the cookies to cool (if you can wait!) and store in an airtight container for up to one week.
