Ingredients:
-
1 lb fun-shaped pasta (bowtie, cavatappi, or similar)
-
1 cup mayonnaise
-
1 cup sour cream
-
2 tbsp white vinegar
-
2 tsp Dijon mustard
-
1 tsp sugar
-
1 tsp kosher salt
-
½ tsp black pepper
-
1 cup diced red bell pepper
-
1 cup diced celery
-
½ cup finely diced red onion
-
½ cup finely diced carrot
Optional Add-Ins:
-
Chilled shrimp
-
Leftover cooked chicken
Instructions:
-
Cook the pasta according to package directions. Drain and allow it to cool completely.
-
Transfer the cooled pasta to a zip-top bag and refrigerate for 24 hours. This helps lower the pasta’s glycemic impact and supports healthy gut bacteria.
-
In a large bowl, whisk together the mayonnaise, sour cream, white vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
-
Add the chilled pasta to the dressing, followed by the red bell pepper, celery, red onion, and carrot. Stir until everything is evenly coated.
-
For a heartier dish, mix in chilled shrimp or leftover chicken if desired.
-
Refrigerate until ready to serve.
