Pink Cadillac Pasta Salad

Ingredients:

  • 1 lb fun-shaped pasta (bowtie, cavatappi, or similar)

  • 1 cup mayonnaise

  • 1 cup sour cream

  • 2 tbsp white vinegar

  • 2 tsp Dijon mustard

  • 1 tsp sugar

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 cup diced red bell pepper

  • 1 cup diced celery

  • ½ cup finely diced red onion

  • ½ cup finely diced carrot

Optional Add-Ins:

  • Chilled shrimp

  • Leftover cooked chicken

Instructions:

  1. Cook the pasta according to package directions. Drain and allow it to cool completely.

  2. Transfer the cooled pasta to a zip-top bag and refrigerate for 24 hours. This helps lower the pasta’s glycemic impact and supports healthy gut bacteria.

  3. In a large bowl, whisk together the mayonnaise, sour cream, white vinegar, Dijon mustard, sugar, salt, and pepper until smooth.

  4. Add the chilled pasta to the dressing, followed by the red bell pepper, celery, red onion, and carrot. Stir until everything is evenly coated.

  5. For a heartier dish, mix in chilled shrimp or leftover chicken if desired.

  6. Refrigerate until ready to serve.
