Baked Feta Pasta

Ingredients:

Cherry or grape tomatoes (about 2 cups)

Olive oil

Fresh garlic cloves, sliced

Fresh basil

1 block feta cheese

Pasta (spaghetti, fettuccine, macaroni, or whatever you have on hand)

Instructions:
Preheat the oven to 400°F (200°C).
In a baking dish, toss the cherry or grape tomatoes with a drizzle of olive oil, sliced garlic, and a bit of fresh basil.
Place the block of feta cheese in the center of the dish.
Bake for 20–25 minutes, until the tomatoes are softened and roasted and the feta is warm and bubbly.
While everything bakes, cook the pasta according to package directions and drain well.
Remove the dish from the oven and add the cooked pasta directly to the tomatoes and feta. Toss until the cheese melts into a creamy sauce that coats the pasta evenly.
Serve as-is for a simple vegetarian meal, or top with grilled chicken or shrimp if you like.
