Cranberry Orange Cookies

Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tablespoons orange juice
1 tablespoon finely grated orange zest
2½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup chopped dried cranberries
(Optional: white chocolate chips, if you like)

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, cream together the softened butter and sugar.

  3. Beat in the egg, orange juice, and orange zest until fully combined.

  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet mixture, mixing just until everything comes together.

  6. Fold in the chopped dried cranberries (and white chocolate chips, if using).

  7. Drop tablespoonfuls of dough onto a baking sheet or rack.

  8. Bake for about 8 minutes at 350°F — or adjust the time slightly for softer or crispier cookies, depending on your preference.

  9. Let cool before serving.
