Ingredients:
1 cup chopped vegetables (any leftovers like spinach, onion, mushrooms, etc.)
8 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cottage cheese
1 cup shredded cheddar cheese
Instructions:
Preheat your oven to 375°F.
Chop your chosen vegetables into small, bite-sized pieces.
In a large bowl, whisk together the eggs, milk, salt, and black pepper.
Stir in the chopped vegetables, cottage cheese, and shredded cheddar until everything is well combined.
Pour the mixture into a 9 x 9-inch baking dish.
Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
Let cool for a few minutes, then slice and serve.
