Cottage Cheese Tots

Ingredients:

1 head of cauliflower

1 cup plain cottage cheese

½ cup breadcrumbs

½ cup grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped scallions (or more, to taste)

1 egg

Instructions:

Preheat your oven to 400°F or set your air fryer according to the manufacturer’s instructions.

Steam the cauliflower until tender, then mash it well and squeeze out as much moisture as possible.

In a large mixing bowl, combine the mashed cauliflower, cottage cheese, breadcrumbs, Parmesan, garlic powder, onion powder, salt, pepper, scallions, and egg. Stir until fully blended.

Shape the mixture into small “tot” forms.

Arrange the tots on a parchment-lined baking sheet or in your air fryer basket (lined if needed).

Bake or air fry for about 25 minutes, or until golden and crisp.

Serve warm and enjoy your high-protein, low-carb alternative to traditional tater tots!
