Ingredients:
1 lb ground beef (or substitute with ground turkey or chicken)
1 cup uncooked rice (parboiled, short-grain, basmati, or jasmine)
2 cups beef broth (or 3 cups if using dry French onion soup mix)
1 can French onion soup (or dry soup mix as noted)
1 cup shredded cheese
1 medium onion, chopped
2 cloves garlic, minced
Salt and pepper, to taste
Instructions:
Preheat Oven:
Set your oven to 350°F (175°C).
Cook the Beef:
In a large skillet, brown the ground beef over medium heat for 5–7 minutes. Add the chopped onion and cook until softened and fragrant. Stir in the minced garlic and cook for another minute.
Drain:
Drain any excess grease from the skillet.
Combine Ingredients:
Stir in the uncooked rice, beef broth, French onion soup, salt, and pepper. Mix everything together until well combined.
If using dry French onion soup mix, add 3 cups of beef broth along with the dry mix instead of the canned soup.
Assemble the Casserole:
Transfer the mixture to a greased casserole dish. Sprinkle shredded cheese evenly over the top, and gently stir if you’d like it mixed throughout.
Bake:
Cover with foil and bake for about 35 minutes. Check occasionally to ensure the rice doesn’t overcook or become mushy.
Rest & Serve:
Remove from the oven and let the casserole rest for a few minutes before serving.
