2 pounds ground chicken (or substitute with ground turkey or pork)
1 cup grated Parmesan cheese (plus extra for topping)
1 cup panko breadcrumbs
2 large eggs
4 cloves garlic, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon salt
½ teaspoon black pepper
½ cup whole milk
Optional Glaze:
Extra Parmesan cheese
Garlic butter (for drizzling before serving)
Directions:
Preheat the oven to 375°F (190°C).
In a small bowl, combine the panko breadcrumbs and milk. Let sit a few minutes to allow the breadcrumbs to absorb the liquid.
In a large mixing bowl, add the ground chicken, Parmesan cheese, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, pepper, and the breadcrumb-milk mixture. Gently mix until just combined—avoid overmixing to keep the meatloaf tender.
Transfer the mixture to a meatloaf pan and shape it into a loaf.
Sprinkle additional Parmesan over the top for extra flavor and a golden finish.
Bake for about 45 minutes, or until the meatloaf is fully cooked through.
For added richness, melt butter with a bit of minced garlic and Parmesan to make a quick garlic butter drizzle. Pour over the meatloaf just before serving.
Slice and serve warm. It pairs wonderfully with mashed potatoes, roasted vegetables, or as a delicious sandwich with leftovers.
