Italian Grinder Chicken Salad

Ingredients:

2–3 cups cooked chicken, shredded or diced

¼ lb salami, finely diced

¼ lb pepperoni, finely diced

¼ lb provolone cheese, diced

½ cup cherry tomatoes, quartered

½ cup banana peppers or pepperoncinis, diced or sliced (mild or hot, your choice)

½ cup red onion, diced

For the Dressing:

1 cup Italian dressing (Ken’s Northern Italian or homemade works great)

½ cup mayonnaise

Instructions:

1. Mix the Salad
In a large bowl, combine the chicken, salami, pepperoni, provolone, cherry tomatoes, banana peppers (or pepperoncinis), and red onion.

2. Make the Dressing
In a separate bowl, whisk together the Italian dressing and mayonnaise until smooth and creamy.

3. Combine Everything
Pour the dressing over the salad mixture and toss well until everything is evenly coated.

4. Serve It Up
Enjoy on a crusty roll as a grinder-style sandwich, over a bed of lettuce for a hearty salad, or with crackers for an easy snack.

Tip: Control the heat by choosing mild or spicy banana peppers or pepperoncinis.
