Ingredients:
1 pie crust (homemade or store-bought, baked as directed)
4 ripe tomatoes
Salt and pepper
½ cup Duke’s mayonnaise
2 cups cheese (choose from mozzarella, provolone, parmesan, sharp cheddar, or a blend)
Fresh basil, chopped (to taste)
¼ cup chopped green onions
12 Ritz crackers
Melted butter (just enough to coat the crackers)
Instructions:
Preheat oven to 350°F.
Bake your pie crust according to package directions (or your recipe) and allow it to cool slightly.
Slice tomatoes, pat them dry, and layer them inside the crust—sprinkling each layer with salt and pepper.
In a medium bowl, combine mayonnaise, cheese(s), fresh basil, and green onions. Spread this mixture evenly over the tomatoes.
Crush the Ritz crackers, toss them with melted butter, and sprinkle evenly on top.
Cover the pie loosely with foil and bake for 25 minutes.
Remove from oven, uncover, and let it cool a bit before slicing.
