Ingredients:
1 cup all-purpose flour
1 tablespoon baking powder

1 cup sugar
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon lemon extract
½ cup (1 stick) unsalted butter, melted
1 can (21 oz) lemon pie filling
Whipped cream or vanilla ice cream (for serving)
Lemon slices (for garnish, optional)
Instructions:
Preheat the Oven:
Set your oven to 350°F (175°C).
Make the Batter:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Add the buttermilk, vanilla extract, and lemon extract. Mix until smooth and well combined.
Add to the Baking Dish:
Pour the melted butter into a 9x9-inch baking dish.
Gently pour the batter over the butter—do not stir.
Add the Lemon Filling:
Spoon the lemon pie filling evenly over the top of the batter.
Again, do not mix—this layering helps create the “magic” cobbler effect.
Bake:
Bake for 45–55 minutes, or until the top is golden and the edges are crisp.
Cool and Serve:
Let the cobbler cool slightly before serving.
Enjoy warm with a scoop of ice cream or a dollop of whipped cream. Garnish with lemon slices if desired.
